Traditional Scottish Tablet

Instructions

Butter a 9x13-inch or 9-inch square pan.

In a large saucepan, heat milk on low and stir in butter until melted.

Attach a candy thermometer. Add sugar, stirring until dissolved. Increase heat to high, boil for 5 minutes while stirring, until the mixture reaches 250 F.

Carefully stir in condensed milk. Reduce heat to low and simmer for 20-25 minutes, until medium bubbles form, and the mixture darkens, reduces, and thickens.

Transfer the pan to a work surface. Beat the mixture on high with an electric mixer for 5-10 minutes until grainy and thick.

Stir in optional flavorings.

Pour into the prepared pan and spread evenly.

Cool for 30 minutes. When cool but still soft, cut into 1-inch squares. Let cool completely or place in the freezer.

Store wrapped tablet pieces in an airtight container at room temperature for up to 10 days.
