Traditional Scottish Tablet

Instructions

  1. Butter a 9x13-inch or 9-inch square pan.

  2. In a large saucepan, heat milk on low and stir in butter until melted.

  3. Attach a candy thermometer. Add sugar, stirring until dissolved. Increase heat to high, boil for 5 minutes while stirring, until the mixture reaches 250 F.

  4. Carefully stir in condensed milk. Reduce heat to low and simmer for 20-25 minutes, until medium bubbles form, and the mixture darkens, reduces, and thickens.

  5. Transfer the pan to a work surface. Beat the mixture on high with an electric mixer for 5-10 minutes until grainy and thick.

  6. Stir in optional flavorings.

  7. Pour into the prepared pan and spread evenly.

  8. Cool for 30 minutes. When cool but still soft, cut into 1-inch squares. Let cool completely or place in the freezer.

  9. Store wrapped tablet pieces in an airtight container at room temperature for up to 10 days.
