Traditional Scottish Stovies

Instructions

  1. Preheat oven to 375 F (190 C).

  2. Melt lard or drippings in a Dutch oven or casserole dish over medium heat, then cook onions until soft (5-8 minutes).

  3. If using, add beer or stout and boil for 2 minutes before stirring in the meat.

  4. Layer potatoes, seasoning each layer with salt and pepper, then pour in stock or gravy.

  5. Cover and bake for 45 to 50 minutes, adding extra stock if needed to prevent drying.

  6. During the final 10 minutes of baking, stir in any leftover vegetables and check the seasoning.
