Instructions

  1. Preheat oven to 375 F and prepare a baking sheet.

  2. Finely grind oatmeal, then combine with bicarbonate of soda and salt in a large bowl.

  3. Stir in melted fat until dry ingredients are coated, then add hot water and mix to form a thick dough.

  4. Divide the dough into two balls, coat with ground oats, and knead until slightly dry.

  5. Roll each ball into a 1/4-inch thick disc, then cut each disc into four wedges, yielding 8 pieces.

  6. Place wedges on the baking sheet and bake for 20 to 30 minutes, until edges are brown.

  7. Serve the oatcakes warm or cool.
