Traditional Scottish Dundee Cake
A traditional Scottish Dundee cake, rich with fruits and Scotch whisky, makes a classic Christmas treat.

Instructions

Preheat the oven to 300 F (150 C/Gas 2) and line an 8-inch cake pan with greased baking paper.

Cream butter, sugar, and zest until light and smooth.

In a separate bowl, combine flour, baking powder, and mixed spice.

Gradually beat eggs into the creamed butter, alternating with the flour mixture, until both are fully incorporated.

Fold in raisins, candied citrus peel, and cherries.

Stir in the whisky.

Spoon the batter into the prepared pan and level the top.

Bake for 1 1/2 hours, then arrange blanched almonds on top and return to the oven for an additional hour, or until golden brown.

Cool the cake completely in the pan on a rack before removing, slicing, and serving.
