Traditional Scottish Clootie Dumpling
A traditional fruit and spice-filled clootie dumpling is a renowned Scottish pudding, ideal for celebrations.

Instructions

Start boiling water in a kettle and a large cooking pot.

Combine flour, suet, oatmeal, sultanas, dried currants, sugar, baking powder, ginger, and cinnamon in a mixing bowl.

Stir in beaten eggs and golden syrup.

Gradually add milk to bind ingredients into a firm dough.

Wet a clootie cloth with boiling water, wring it out, and sprinkle with flour.

Place the dumpling mixture onto the floured cloth, gather the edges, and tie loosely for expansion.

Place a saucer upside down in the cooking pot, set the tied clootie on top, cover with boiling water, and simmer for 3 hours, adding water as needed.

Remove the dumpling from the water, unwrap it, and sprinkle with caster sugar.

Preheat the oven to 225 F (100 C).

Bake for 30 minutes, or until a shiny skin forms.

Slice and serve the clootie dumpling.
