Traditional Scottish Clootie Dumpling

Instructions

  1. Start boiling water in a kettle and a large cooking pot.

  2. Combine flour, suet, oatmeal, sultanas, dried currants, sugar, baking powder, ginger, and cinnamon in a mixing bowl.

  3. Stir in beaten eggs and golden syrup.

  4. Gradually add milk to bind ingredients into a firm dough.

  5. Wet a clootie cloth with boiling water, wring it out, and sprinkle with flour.

  6. Place the dumpling mixture onto the floured cloth, gather the edges, and tie loosely for expansion.

  7. Place a saucer upside down in the cooking pot, set the tied clootie on top, cover with boiling water, and simmer for 3 hours, adding water as needed.

  8. Remove the dumpling from the water, unwrap it, and sprinkle with caster sugar.

  9. Preheat the oven to 225 F (100 C).

  10. Bake for 30 minutes, or until a shiny skin forms.

  11. Slice and serve the clootie dumpling.
