Instructions

  1. Separate one egg.

  2. Beat the egg yolk until creamy.

  3. Beat the egg white with 1 teaspoon sugar to soft peaks.

  4. Gently fold the egg white and yolk together.

  5. In a separate bowl, beat 1 ounce heavy cream with 1/2 teaspoon vanilla extract, 1/4 teaspoon almond extract, and 1 teaspoon sugar until stiff peaks form.

  6. Stir in 1 1/2 ounces aged rum.

  7. Fold the cream into the egg mixture.

  8. Serve immediately over ice, if desired.
