Traditional Rock Cakes
Traditional British rock cakes, featured in Harry Potter, are simple to prepare and consist of sweet, dried fruit-studded dough baked into a pebbly bun.

Preheat the oven to 350 F (175 C) and prepare two baking sheets by greasing or lining with parchment paper.

Sift flour and baking powder into a large bowl.

Rub in softened butter until the mixture resembles fine breadcrumbs.

Stir in sugar and dried fruit until well combined.

Form a well, add egg and 1 tablespoon milk, then whisk. Incorporate dry ingredients to form a stiff dough, adding more milk one tablespoon at a time if needed.

Divide dough into 12 quarter-cup mounds, spacing them on the baking sheets; optionally sprinkle with demerara sugar.

Bake for 15 minutes or until golden brown, risen, and firm to the touch.
