Instructions

  1. Preheat the oven to 350 F (175 C) and prepare two baking sheets by greasing or lining with parchment paper.

  2. Sift flour and baking powder into a large bowl.

  3. Rub in softened butter until the mixture resembles fine breadcrumbs.

  4. Stir in sugar and dried fruit until well combined.

  5. Form a well, add egg and 1 tablespoon milk, then whisk. Incorporate dry ingredients to form a stiff dough, adding more milk one tablespoon at a time if needed.

  6. Divide dough into 12 quarter-cup mounds, spacing them on the baking sheets; optionally sprinkle with demerara sugar.

  7. Bake for 15 minutes or until golden brown, risen, and firm to the touch.
