Traditional Plantain Mofongo Recipe

A traditional Puerto Rican mofongo features fried and mashed green plantains, seasoned with garlic and crispy pork rinds.

Instructions

  1. Heat 2 inches of oil to 350 F in a large skillet or deep fryer while peeling and cutting 3 unripe green plantains into 1-inch rounds.

  2. Fry the plantain rounds until golden and tender (4-6 minutes), then transfer them to a paper-towel-lined plate.

  3. Combine 1 tablespoon garlic paste and the fried plantains in a large bowl or mortar; mash thoroughly.

  4. Add 6 ounces of crushed pork rinds, mash, mix until combined, and season with salt.

  5. Shape the mofongo into 4 balls for serving, or press into a small condiment bowl to form a half-dome, then gently remove.
