Traditional Pear Butter

Instructions

  1. In a saucepan, combine pears and water, bring to a boil, then reduce heat and simmer until the pears are softened.

  2. Pass the softened pears through a sieve or food mill to create a smooth puree.

  3. Mix the pear puree with sugar to taste.

  4. Transfer the sweetened puree to a slow cooker, leaving the lid partially ajar; cook on low heat, stirring occasionally, for 6-12 hours until thickened and it no longer drips from a spoon.

  5. To store, refrigerate for up to three weeks or freeze for up to one year.

  6. For canning, fill hot sterilized jars with the hot pear butter, leaving 1/4 inch headspace, then seal with hot lids and rings.

  7. Process the sealed jars in a water bath for 10 minutes, then cool completely before storing.
