Traditional Lithuanian Potato Pudding (Kugelis)

Lithuanian potato pudding, also known as kugelis, is a traditional dense dish that can be served as a side or a main course with a salad.

Instructions

  1. Preheat oven to 350 F and coat a 13x9-inch pan with cooking spray.

  2. Sauté bacon and onion in a large skillet until browned and caramelized; let cool in the pan with drippings.

  3. Combine eggs, milks, salt, farina, and the cooled bacon-onion mixture with drippings in a large bowl.

  4. Finely grate potatoes, quickly squeezing out excess moisture to prevent darkening.

  5. Add the grated potatoes to the bacon-egg mixture and combine thoroughly.

  6. Pour the mixture into the prepared pan and bake for 1.5 hours, or until the top is brown and the interior is solid yet moist.

  7. Remove from oven and rest for 5 minutes before cutting.

  8. Serve warm; refrigerate leftovers and reheat as desired.
