Instructions

  1. Preheat oven to 450 F.

  2. Combine flour, sugar, baking powder, salt, whole eggs, and yolk in a mixer to form a smooth dough. Knead in chopped skin-on almonds.

  3. Turn dough onto a floured surface, form a ball, and divide into 4 equal pieces. Roll each piece into a 2-inch wide, 6-inch long log.

  4. Line a baking sheet with greased parchment. Place logs 2 inches apart on the sheet. Brush logs with glaze and sprinkle with sugar.

  5. Bake for 20 minutes, until golden.

  6. Reduce oven temperature to 300 F. While warm, slice logs into 1-inch pieces. Arrange slices on the baking sheet and bake for 15 minutes.

  7. Transfer biscotti to a cooling rack until completely cool. Store in an airtight container.
