Traditional Italian Biscotti
Traditional Tuscan biscotti are a delicious, quick-to-prepare treat that stores well.

Instructions

Preheat oven to 450 F.

Combine flour, sugar, baking powder, salt, whole eggs, and yolk in a mixer to form a smooth dough. Knead in chopped skin-on almonds.

Turn dough onto a floured surface, form a ball, and divide into 4 equal pieces. Roll each piece into a 2-inch wide, 6-inch long log.

Line a baking sheet with greased parchment. Place logs 2 inches apart on the sheet. Brush logs with glaze and sprinkle with sugar.

Bake for 20 minutes, until golden.

Reduce oven temperature to 300 F. While warm, slice logs into 1-inch pieces. Arrange slices on the baking sheet and bake for 15 minutes.

Transfer biscotti to a cooling rack until completely cool. Store in an airtight container.
