Traditional Irish Stew Recipe

Instructions

  1. Preheat oven to 350 F with a rack in the center.

  2. Heat 1 tablespoon oil in a large skillet over medium-high heat. Brown half of the 1-pound lamb pieces, then transfer to a Dutch oven.

  3. Layer half of the 2 pounds potato quarters, 1 cup chopped carrots, 1 cup chopped onion, and 1 cup sliced leeks over the lamb.

  4. Add the remaining 1 tablespoon oil to the skillet and brown the remaining lamb. Transfer to the Dutch oven, then top with the remaining potatoes, onions, leeks, and carrots.

  5. Stir 2 tablespoons flour into the hot skillet and cook over low heat for 3 minutes.

  6. Gradually whisk in up to 3 cups beef stock until a thick, smooth sauce forms.

  7. Pour the sauce and any remaining stock over the lamb and vegetables in the Dutch oven. Cover and bake for 1 hour.

  8. Stir in 2 to 3 sliced cabbage leaves (if using), cover, and cook for another hour. Ensure ingredients remain submerged, adding boiling water if necessary.

  9. Season with salt and pepper, then serve hot.
