Traditional Irish Colcannon Recipe

Instructions

  1. Start boiling 2 inches of water in a 4-quart pot with 2 pounds peeled, quartered Yukon Gold potatoes and 2 teaspoons salt.

  2. Boil potatoes for about 12 minutes until tender, then drain and reserve the saucepan.

  3. Melt 2 tablespoons unsalted butter in a skillet over medium heat, then add 3 cups chopped kale, the white parts of green onions, and 1 bay leaf. Cook for 5 minutes until kale is tender.

  4. Stir in 1 1/4 cups milk and 1 teaspoon dry mustard powder; reduce heat to low once simmering to keep warm.

  5. Return drained potatoes to the saucepan, add 4 tablespoons unsalted butter and the green parts of green onions, then mash until nearly smooth.

  6. Discard the bay leaf, then add the kale-milk mixture to the potatoes and stir to combine. Season with salt and pepper to taste and serve.
