Traditional Irish Boiled Dinner

Instructions

  1. Combine beef brisket, beer, water, bay leaves, peppercorns, parsley, and salt in an 8-10 quart covered pot.

  2. Sauté garlic, leeks, and yellow onion in butter or olive oil until translucent, then add to the pot.

  3. Bring the pot contents to a boil, then reduce heat, cover, and simmer for 3.5 hours, or until the beef is very tender.

  4. Add carrots and red potatoes during the last 25 minutes of cooking.

  5. Incorporate turnips, cabbage, salt, and pepper in the final 15 minutes of cooking.

  6. Slice the beef thinly and serve with the cooked vegetables and pot juices, adding horseradish and grainy mustard if desired.
