Traditional Hanukkah Potato Latkes

These traditional, kosher, dairy-free fried potato latkes are a simple Hanukkah dish made from potatoes, onions, eggs, and flour.

Instructions

  1. Line a platter with paper towels.

  2. Peel potatoes, cover them with cold water to prevent browning, then drain.

  3. Combine drained potatoes and onions in a food processor; pulse until smooth, then thoroughly drain the mixture.

  4. Mix the potato mixture with beaten eggs, salt, and pepper in a large bowl.

  5. Add flour until the mixture achieves a cohesive consistency.

  6. Heat oil in a deep frying pan over medium-high heat for shallow frying.

  7. Drop 1/4 cup portions of batter into the hot oil, flatten slightly, and fry each side for several minutes until golden brown; avoid crowding the pan.

  8. Transfer cooked latkes to the paper towel-lined platter to drain, then repeat with remaining batter. Serve immediately.
