Instructions

  1. Preheat the oven to 350 F and grease a baking sheet.

  2. Beat butter, castor sugar, and brown sugar until light and creamy, then slowly add the beaten egg.

  3. Sift together flour, baking powder, salt, nutmeg, cloves, cinnamon, ginger, and mixed spice, then stir this mixture into the butter and egg mixture.

  4. Roll half the dough between two sheets of greaseproof paper to 1/8- to 1/4-inch thick, transfer to a baking sheet, and repeat with the remaining dough; refrigerate for at least 2 hours.

  5. Cut the chilled dough with a cookie cutter, gathering and rerolling scraps as needed until all dough is used.

  6. Place biscuits in batches on the prepared baking sheets, keeping any unbaked dough cold in the refrigerator.

  7. Bake each batch for 10 minutes, then carefully remove the soft biscuits from the baking sheet and cool on a wire rack until hardened.
