Traditional Fried Mexican Quesadillas

A traditional Mexican street snack, these fried quesadillas are made with raw corn tortillas stuffed with cheese.

Instructions

  1. Divide the masa into 10 equal balls.

  2. Press each ball into a 4-inch disc between plastic wrap or with a tortilla press.

  3. Place one cheese slice and optional additional fillings in the center of each disc.

  4. Fold each tortilla in half and seal the edges with dampened fingers.

  5. Fry quesadillas in batches in one inch of hot oil or lard, turning until golden brown and crispy.

  6. Drain fried quesadillas on a rack or absorbent paper before serving.
