Instructions

  1. Heat heavy cream in a small saucepan over medium heat until hot and just bubbling, then remove from heat.

  2. Stir in finely chopped chocolate and vanilla extract until the ganache is completely smooth.

  3. Chill the ganache in the fridge until firm enough to roll into balls.

  4. Scoop by heaping teaspoonfuls and quickly roll into balls, chilling them as you work to prevent melting.

  5. Roll each chilled truffle in cocoa powder until evenly coated, then return to the fridge to chill again before serving.
