Traditional Flemish Waterzooi Recipe

Instructions

  1. Start boiling salted water and cook potatoes until done.

  2. Heat butter in a frying pan. Sauté celery, carrot, and onion for 3-5 minutes until soft, then add leeks and cook 2 more minutes.

  3. Add stock to the vegetables and let it infuse for 3 minutes.

  4. Poach fish fillets in the broth for 3-5 minutes. Add mussels after 1 minute.

  5. Once mussels open, remove seafood and set aside. Strain the stock into a saucepan and reserve the cooked vegetables.

  6. Whisk egg yolk with cream. Reheat the strained stock to boiling, then whisk in the cream and egg mixture to thicken the sauce without re-boiling.

  7. Stir peeled shrimp and half the chives into the sauce.

  8. Arrange fish, vegetables, and potatoes in a serving bowl. Pour the sauce over them.

  9. Garnish with the remaining chives.
