Traditional Filipino Pancit

Instructions

  1. Heat oil in a large wok or skillet. Stir-fry vegetables and onion for three minutes.

  2. Add garlic and fry for one minute, then add ginger and shrimp. Continue stir-frying until shrimp are pink and cooked through.

  3. Pour in broth and bring to a boil. Add pancit canton noodles, stir to soften, then reduce heat and cook for five minutes until noodles absorb the broth.

  4. Stir in soy and fish sauce, then taste and adjust seasoning.

  5. Serve the pancit in warmed bowls with noodles, shrimp, and vegetables, spooning over the broth. Garnish with cilantro if desired.
