Traditional Dutch Brown Bean Soup

Instructions

  1. In a large soup pot, fry bacon in butter.

  2. Stir in shallots, carrot, leek, and paprika.

  3. Add beans, tomato puree, stock, and bay leaves.

  4. Bring the soup to a boil, then cover and simmer for 15 minutes.

  5. Discard the bay leaves.

  6. Season the soup with salt, pepper, and ketjap manis (or Worcestershire sauce).

  7. Partially blend the soup with a stick blender or food processor, ensuring some texture remains.

  8. Garnish with celery leaves just before serving.
