Traditional Dutch Brown Bean Soup

Instructions

In a large soup pot, fry bacon in butter.

Stir in shallots, carrot, leek, and paprika.

Add beans, tomato puree, stock, and bay leaves.

Bring the soup to a boil, then cover and simmer for 15 minutes.

Discard the bay leaves.

Season the soup with salt, pepper, and ketjap manis (or Worcestershire sauce).

Partially blend the soup with a stick blender or food processor, ensuring some texture remains.

Garnish with celery leaves just before serving.
