Traditional Czech Bread Dumplings

A traditional Czech bread dumpling, called houskovy knedlik, is prepared to accompany dishes like roast pork and braised sweet-sour cabbage.

Instructions

  1. Start boiling a large pot of salted water.

  2. Whisk together flour, baking powder, and salt in a large bowl.

  3. In a separate bowl, whisk egg yolks and milk.

  4. Pour the egg-milk mixture into the dry ingredients.

  5. Knead the dough until it no longer sticks to the bowl, then cover and let stand for 1 hour.

  6. Incorporate 4 cups of bread cubes into the dough.

  7. Shape the dough into 3 or 4 rolls, each about 8 inches long and 2.5 inches wide, using floured hands.

  8. Carefully place the rolls into the boiling water, stirring to prevent sticking; cook in batches if necessary.

  9. Reduce heat, cover, and simmer for 10-15 minutes.

  10. After 10 minutes, remove one dumpling and slice to check for doneness; it is done when the knife comes out almost clean.

  11. Remove all cooked dumplings and slice into 3/4-inch pieces.

  12. Serve warm with gravy and fresh parsley garnish.
