Grilled Brazilian-style skirt steak skewers, marinated and cooked to perfection, are served alongside a vibrant chimichurri sauce, rice, and grilled vegetables.

Instructions

  1. Preheat grill to medium-high heat.

  2. Season both sides of the steaks with salt and pepper.

  3. Cut steaks into 2-inch wide strips, then roll into coils and thread 3-4 pieces onto metal skewers.

  4. Grill skewers for 4-5 minutes per side, until internal temperature reaches 155-165 F; then remove and let rest.

  5. While meat rests, combine salt, pepper, olive oil, onion, garlic, red wine vinegar, parsley, and oregano in a small dish to make the sauce.

  6. Pour the prepared sauce over the skirt steak and serve with desired sides.
