Heat a cast-iron skillet or pot over medium heat for 2 minutes, then add oil and heat for another 2 minutes.

Stir in the flour constantly until smooth, continuing to cook and stir for about 8 minutes to achieve a blonde color.

For a darker roux, cook and stir frequently for up to 60 minutes.

The roux is ready to use once it reaches the desired color.
