Instructions

  1. In a large frying pan, melt 6 tablespoons unsalted butter or vegetable oil over medium heat without browning.

  2. Add 1/2 cup finely chopped onion and fry for 3 minutes until soft.

  3. Increase heat slightly, then add 1 pound mashed potatoes, 1 cup finely chopped leftover vegetables, and optional chopped meat.

  4. Fry for at least 10 minutes, continuously turning to reheat thoroughly and brown the mixture; occasionally press it to the pan to crisp the edges before turning.

  5. Once heated through, press the mixture onto the pan's base, cook for 1 minute, then flip and repeat.

  6. Season with salt and pepper, and serve with a fried or poached egg.
