Traditional British Faggots Made with Pork and Offal

Instructions

  1. Preheat the oven to 445°F (170°C).

  2. Mince 4 ounces each of pork shoulder, pig's liver, and bacon, plus 8 ounces of pork belly in a grinder or food processor until finely chopped.

  3. In a large bowl, combine the minced meat with 4 ounces breadcrumbs, 1 finely chopped onion, 1/2 teaspoon ground mace, 1 teaspoon ground allspice, 2 tablespoons finely chopped parsley, 2 finely chopped sage leaves, 1 seeded and finely chopped small red chili, and salt and pepper; mix thoroughly.

  4. Divide the mixture into 8 equal portions and roll into balls.

  5. Wrap each ball with two slices of streaky bacon or caul fat.

  6. Place the faggots onto a large rimmed baking sheet.

  7. Bake for 50 to 60 minutes, or until a thermometer inserted into the center reads 160°F. Serve immediately.
