A tray of tater tot nachos combines crispy tots with melted cheese, spicy jalapeños, and savory toppings.

Preheat the oven to 425 F.

Spread tater tots on an aluminum-lined baking sheet and bake for about 25 minutes until golden brown, flipping once.

While tots bake, heat chipotle queso in a crock pot or microwave, stirring until smooth and melted.

Layer pepper jack cheese over the baked tots and return to the oven until melted and slightly browned.

Heat taco or al pastor meat if desired, then spread over the cheesy tots.

Top with chipotle queso, onions, jalapeños, scallions, and additional pepper jack cheese; serve immediately.
