Instructions

  1. Heat 1 1/2 to 2 inches of oil in a heavy pot to 375 F.

  2. While oil heats, peel plantains and cut them into 3/4-inch slices.

  3. Fry the slices in the hot oil for 3 minutes, until light golden and semi-soft; remove and drain on paper towels.

  4. After cooling for about one minute, flatten the fried plantain slices into rounds.

  5. Fry the rounds in the hot oil for another 3 minutes until crisp and golden brown, then remove, drain, and salt to taste.
