Tomato, Cucumber, and Corn Salad

Instructions

  1. Whisk together oil, vinegar or lemon juice, garlic (if using), and salt in a small bowl.

  2. Shuck corn and cut kernels into a large bowl.

  3. Peel, halve, deseed, and dice cucumbers; add to the bowl.

  4. Core, halve, deseed, and dice tomatoes; add to the bowl.

  5. Halve, peel, and dice the onion; rinse and dry if desired to reduce pungency, then add to the bowl.

  6. Toss all vegetables thoroughly with the dressing.

  7. Serve immediately, garnishing with fresh herbs if desired, or chill and toss again before serving.
