Tomato, Corn, and Okra Soup

Instructions

  1. In a saucepan over medium-low heat, melt butter and olive oil.

  2. Sauté the white parts of green onion, garlic, and celery until tender.

  3. Stir in chicken stock, tomatoes, sliced okra, corn kernels, and Creole seasoning.

  4. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 20 to 30 minutes, or until okra is tender.

  5. Season to taste with salt and pepper, then garnish with reserved green onion tops before serving.
