Instructions

  1. Preheat the oven to 250 F.

  2. Whisk together oil, vinegar, salt, and sugar in a medium bowl.

  3. Place tomatoes, garlic, and thyme in a 2 3/4-quart baking dish, then pour the oil mixture over them.

  4. Bake uncovered for 1 1/2 to 2 hours, or until tomatoes are wrinkled and soft but not burst.

  5. Cool to room temperature before serving.
