Tomato Confit

Instructions

Preheat the oven to 250 F.

Whisk together oil, vinegar, salt, and sugar in a medium bowl.

Place tomatoes, garlic, and thyme in a 2 3/4-quart baking dish, then pour the oil mixture over them.

Bake uncovered for 1 1/2 to 2 hours, or until tomatoes are wrinkled and soft but not burst.
