Instructions
-
Start boiling water for preparing apples.
-
In a saucepan, combine sugar, warm water, glucose, and vinegar; heat and stir to dissolve sugar without boiling.
-
Increase heat and boil the toffee to 270°F (140°C), or until a dropped sample solidifies in cold water but remains slightly flexible.
-
While the toffee boils, place apples in a bowl and cover with the boiling water for a few minutes, then remove, rub dry, remove stems, and insert sticks.
-
Line a baking sheet with parchment paper.
-
Remove toffee from heat and let stand for 5 minutes until bubbles subside, then stir in food coloring.
-
Working quickly, dip apples into the tilted toffee, twirling to coat fully, let excess drain, then place on the lined baking sheet to set for at least 20 minutes.
-
If toffee thickens during coating, gently rewarm without boiling; for storage, wrap cooled toffee apples in cellophane.
