Toasted Pasta Soup

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté carrots, onions, salt, turmeric, black pepper, and bay leaves for 5 minutes until onions are translucent.

  2. Reduce heat to low. Add thyme and pasta; cook, stirring frequently, for 6-8 minutes until pasta is golden.

  3. Stir in garlic and optional chili flakes; cook for 30 seconds until fragrant.

  4. Add water or broth and Cajun seasoning. Adjust salt as necessary.

  5. Cover and bring to a boil. Reduce heat and simmer for 6-8 minutes until carrots are soft and pasta is al dente.

  6. Remove from heat, rest 2-3 minutes. Discard thyme stalks and bay leaves before serving.
