Tlayuda (Oaxacan Pizza) Recipe

Instructions

  1. Preheat the oven to 375 F, positioning a pizza stone on the lowest rack for 45 minutes or a baking sheet on the center rack.

  2. Sauté pork in a heavy skillet over low heat for 1 hour until the fat renders completely and the pork is crispy.

  3. Cool the pork and rendered fat for 5 minutes, then separate the meat from any bones.

  4. Blend the rib meat with the rendered fat, 2 tablespoons neutral oil, and salt in a high-speed blender, adding more oil as needed until a smooth paste forms (about 1/2 cup asiento).

  5. Spread the asiento evenly on tortillas.

  6. Thin refried beans with water if necessary, then spread them evenly over the asiento.

  7. Layer the tortillas with shredded cabbage, mozzarella, and any other desired toppings.

  8. Bake the tlayuda directly on the hot pizza stone or baking sheet for about 5 minutes until crispy.

  9. Garnish with cilantro and serve with salsa, if desired.
