Tiropitas: Phyllo Cheese Triangles

Instructions

Preheat the oven to 350 F and lightly grease two large baking sheets.

In a large bowl, crumble feta, then mix in the remaining cheeses and eggs until the mixture is loose but slightly lumpy.

Cut phyllo sheets in half to create 9x12-inch pieces, covering one stack with waxed paper and a damp towel to prevent drying.

Place a single phyllo sheet vertically and brush its surface with melted butter.

Place one tablespoon of filling horizontally 1/2-inch from the bottom center of the sheet.

Fold the right edge two-thirds over the filling, then fold the left edge over to create a 3-inch wide strip.

Brush the strip with additional melted butter.

Fold the bottom corner up over the filling bulge to form a triangle, then continue folding the triangle repeatedly until the strip is used.

Place the completed triangle on the prepared baking sheet; repeat for all remaining phyllo and filling.

Brush the assembled triangles with melted butter.

Bake for 20 to 25 minutes until golden and flaky.

Allow the triangles to cool for 5 to 10 minutes before serving.
