Instructions

  1. Preheat the oven to 350 F and lightly grease two large baking sheets.

  2. In a large bowl, crumble feta, then mix in the remaining cheeses and eggs until the mixture is loose but slightly lumpy.

  3. Cut phyllo sheets in half to create 9x12-inch pieces, covering one stack with waxed paper and a damp towel to prevent drying.

  4. Place a single phyllo sheet vertically and brush its surface with melted butter.

  5. Place one tablespoon of filling horizontally 1/2-inch from the bottom center of the sheet.

  6. Fold the right edge two-thirds over the filling, then fold the left edge over to create a 3-inch wide strip.

  7. Brush the strip with additional melted butter.

  8. Fold the bottom corner up over the filling bulge to form a triangle, then continue folding the triangle repeatedly until the strip is used.

  9. Place the completed triangle on the prepared baking sheet; repeat for all remaining phyllo and filling.

  10. Brush the assembled triangles with melted butter.

  11. Bake for 20 to 25 minutes until golden and flaky.

  12. Allow the triangles to cool for 5 to 10 minutes before serving.
