Tiroler Gröstel (South Tyrolean Hash)

Instructions

  1. Cook, peel, cool, and slice potatoes 1/4-inch thick.

  2. Cut cooked beef into 1/2-inch squares.

  3. Finely chop the onion.

  4. Heat 1 tablespoon oil in a large pan, brown the onion, and remove.

  5. Heat 1 tablespoon oil and 1 tablespoon butter in the pan; add potatoes and brown one side without stirring.

  6. Flip potatoes, then add beef, onions, salt, pepper, marjoram, and caraway seeds.

  7. Continue browning, stirring as needed, until heated through and crispy; add more fat if necessary.

  8. Fry 4 eggs in butter in a separate pan.

  9. Serve hash topped with a fried egg and parsley.
