Instructions

  1. Preheat the oven to 375 F.

  2. For the crust, combine chocolate wafer crumbs, sugar, and melted butter; press the mixture into a 9-inch springform pan, wrap it in foil, and chill.

  3. For the filling, beat cream cheese, mascarpone, flour, and salt until smooth.

  4. Add sugar and beat, then incorporate coffee liqueur, vanilla extract, and instant espresso powder.

  5. Blend in eggs one at a time until just combined.

  6. Pour the filling into the chilled crust and bake for 50 to 65 minutes until set with a slight jiggle in the center.

  7. Cool completely on a wire rack, then cover and refrigerate for at least 8 hours.

  8. Before serving, remove the springform pan side and dust the cheesecake generously with cocoa powder.

  9. For the whipped cream, whip heavy cream, coffee liqueur, and powdered sugar until stiff peaks form, then transfer to a piping bag.

  10. Slice ladyfingers in half and press them around the sides of the cake, using whipped cream to secure them if needed.

  11. Pipe whipped cream along the top edge of the cheesecake, then cut and serve immediately.
