Instructions
-
Preheat the oven to 375 F.
-
For the crust, combine chocolate wafer crumbs, sugar, and melted butter; press the mixture into a 9-inch springform pan, wrap it in foil, and chill.
-
For the filling, beat cream cheese, mascarpone, flour, and salt until smooth.
-
Add sugar and beat, then incorporate coffee liqueur, vanilla extract, and instant espresso powder.
-
Blend in eggs one at a time until just combined.
-
Pour the filling into the chilled crust and bake for 50 to 65 minutes until set with a slight jiggle in the center.
-
Cool completely on a wire rack, then cover and refrigerate for at least 8 hours.
-
Before serving, remove the springform pan side and dust the cheesecake generously with cocoa powder.
-
For the whipped cream, whip heavy cream, coffee liqueur, and powdered sugar until stiff peaks form, then transfer to a piping bag.
-
Slice ladyfingers in half and press them around the sides of the cake, using whipped cream to secure them if needed.
-
Pipe whipped cream along the top edge of the cheesecake, then cut and serve immediately.
