TikTok's Dirty Martini Pasta

Instructions

  1. Start boiling a large pot of salted water. Cook 1 pound bucatini or similar pasta for about 8 minutes, or 1 minute less than al dente. Reserve 1 cup pasta water, then drain pasta.

  2. While pasta cooks, melt 2 tablespoons unsalted butter and 1 tablespoon olive oil in a large skillet over medium heat. Add 3 chopped anchovies, 3 minced garlic cloves, 1 cup chopped Castelvetrano or green olives, and 1 tablespoon lemon zest; cook for 3 minutes until fragrant.

  3. Stir in 1 tablespoon lemon juice, 1/3 cup gin or vodka, and 1/4 cup olive brine. Increase heat to high, boil, and reduce by half for about 3 minutes, then remove from heat.

  4. Combine the cooked pasta, prepared sauce, and 1/2 cup reserved pasta water in the original pasta pot. Simmer over low heat for 2 minutes, tossing until the pasta is al dente and well-coated.

  5. Stir in 1/3 cup chopped fresh parsley, black pepper, and half of the crumbled blue cheese. Adjust sauce consistency with more pasta water if needed. Serve garnished with remaining blue cheese and parsley.
