Instructions

  1. Preheat a gas or charcoal grill to medium-high (400-475°F) and clean/oil the grates.

  2. Combine yogurt, papaya, garlic, lime juice, ginger, cumin, onion powder, salt, and chili in a large bowl.

  3. Add meat to the mixture, coat, cover, and refrigerate for 4 hours or overnight.

  4. Thread 5-8 marinated meat pieces onto skewers, leaving space between each.

  5. Grill kebabs for 10-12 minutes, rotating occasionally, until cooked and charred; then rest for 5 minutes.
