Instructions

  1. Preheat oven to 400 F.

  2. In a stand mixer, combine water, milk, butter, sugar, salt, and yeast.

  3. Add whole wheat flour and 2 cups of all-purpose flour, mixing until a thick batter forms.

  4. Switch to a dough hook, add the remaining 1 cup of all-purpose flour, and mix for 5 minutes until the dough is smooth and elastic.

  5. Transfer dough to an oiled bowl, cover, and let rise in a warm place for 1 hour until doubled in size.

  6. Divide the dough into 8 portions, shape each into a ball, and arrange on a parchment-lined baking sheet. Cover and let rise for 30 minutes.

  7. For the topping, whisk together rice flour, yeast, sugar, and salt.

  8. Combine oil with warm water, then add this mixture to the dry topping ingredients and whisk until combined. Let stand for 20 minutes until bubbly.

  9. Brush the topping generously onto the rolls, then let them rise, uncovered, for an additional 20 minutes.

  10. Bake for 20-22 minutes until golden brown.

  11. Cool rolls slightly on the baking sheet before transferring to a rack to cool completely.
