Instructions

  1. In a medium saucepan, heat 1 tablespoon olive oil over medium-low heat.

  2. Add diced onion, minced garlic, diced jalapeños, chili powder, and salt; cook for 3 to 5 minutes, stirring, until onions are transparent.

  3. Stir in shredded chicken, chicken broth, drained white beans, and drained corn kernels. Bring to a low boil, then cover and simmer for 15 to 20 minutes.
