Instructions

  1. Preheat the broiler.

  2. In a medium bowl, combine tuna, mayonnaise, 3 tablespoons olive oil, caper juice, red onion, celery, parsley or dill, salt, and pepper.

  3. In a small saucepan, heat 2 tablespoons olive oil over medium-high heat. Fry capers for about 4 minutes until crisp, stirring occasionally.

  4. Drizzle or spread olive oil or mayonnaise on 4 slices of bread.

  5. Spread the tuna mixture evenly on each bread slice, then top generously with cheese.

  6. Broil until the cheese is melted and slightly browned.

  7. Garnish with crispy capers before serving.
