The Ultimate Spotted Dick (British Pudding)

Instructions

Preheat oven to 400F or start boiling water for a steamer.

Combine raisins, currants, sugar, and lemon zest in a small bowl.

Sift flour with suet and salt, then gradually add milk to form a soft, elastic dough.

Roll the dough on a floured surface into an 8x12-inch rectangle.

Spread the filling evenly over the dough, leaving a 1/2-inch border, and moisten the edges.

Roll up the dough from the narrow end.

For steaming, soak and wring a tea towel, then wrap it around the pudding and secure with string.

Steam for 2 hours, or wrap in foil and bake at 400F for 1 hour 30 minutes.

Unwrap, slice thickly, and serve with custard sauce if desired.
