The Ultimate Pareve Chocolate Cake

A rich dairy-free and kosher chocolate cake, made with bittersweet chocolate and cocoa powder, can be prepared in Bundt, layer, or cupcake pans.

Instructions

  1. Preheat oven to 350 F (325 F for dark or nonstick pans).

  2. Grease and flour a Bundt pan, or grease two 9-inch layer cake pans and line with greased parchment paper.

  3. Melt chocolate using a double-boiler, microwave, or a bowl over simmering water, then set aside.

  4. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, instant espresso, and salt.

  5. In a separate bowl, whisk together oil, orange juice, water, eggs, and vanilla.

  6. Add wet ingredients to the dry, mixing until just combined.

  7. Stir in the melted chocolate until the batter is smooth.

  8. Pour batter into the prepared pan(s).

  9. Bake for 50-60 minutes for a Bundt pan, or 35-45 minutes for layer cake pans, until a tester comes out clean.

  10. Cool completely on a wire rack.

  11. Glaze or frost as desired.
