Instructions

  1. Preheat the oven to 350 F/180 C. Grease and line a 9x5x3 inch loaf tin.

  2. Sift flour and baking powder into a mixing bowl, then add all remaining cake ingredients.

  3. Mix at high speed until a thick, smooth batter forms.

  4. Pour the batter into the prepared tin and bake for 45 to 50 minutes, or until a skewer comes out clean.

  5. Place the hot cake, still in its tin, on a cooling rack.

  6. For the syrup, mix sugar and lemon juice until the sugar dissolves.

  7. Prick the warm cake all over with a skewer, then slowly spoon the syrup over it, allowing each addition to soak in.

  8. Cool the cake completely in the tin before removing, slicing, and serving or storing.
