Instructions

  1. Preheat the oven to 375 F.

  2. Prick 6 large russet potatoes.

  3. Rub potatoes with 2 tablespoons softened butter.

  4. Place potatoes on a rack in a baking sheet and bake for 45-55 minutes, or until soft.

  5. Remove from oven and cool for 20 minutes.

  6. Halve cooled potatoes lengthwise and scoop out the cooked flesh, leaving a 1/4-inch shell.

  7. In a large bowl, mash the scooped potato flesh with 4 tablespoons softened butter.

  8. Stir in 1/2 cup sour cream, 5 slices crumbled cooked bacon, 2 cups shredded cheddar, 1/2 teaspoon salt, and 1/8 teaspoon white pepper; mash until fluffy.

  9. Spoon mixture back into potato shells and sprinkle with 1/2 teaspoon paprika.

  10. Bake for 20-25 minutes, until puffed and golden.

  11. Garnish with thinly sliced scallions, if desired.
