Instructions

  1. Wash, dry, and cut Romaine lettuce into bite-size pieces; refrigerate covered with a wet paper towel.

  2. Cut bread into 1/2-inch cubes. Heat 1/4 cup olive oil in a pan over medium-low heat, then sauté bread cubes until crispy and golden. Drain on paper towels.

  3. Mash garlic and anchovies into a paste. Combine with egg yolks and lemon juice, beating until smooth.

  4. Slowly whisk in the remaining olive oil. Season the dressing with salt, pepper, and Worcestershire sauce, then stir in half the grated cheese.

  5. In a large bowl, toss the chilled lettuce with the dressing until coated. Add croutons and toss again. Serve immediately, topped with remaining cheese.
