Instructions

  1. Preheat the oven to 300 F (150 C).

  2. Cream butter, brown sugar, and granulated sugar in an electric mixer until fluffy (30 seconds).

  3. Beat in egg and vanilla for another 30 seconds until combined.

  4. Sift flour, baking powder, baking soda, and salt together in a separate bowl.

  5. Gradually add dry ingredients to the mixer on slow speed for 15 seconds, then mix in chocolate chips and espresso powder for 15 seconds more.

  6. Prepare a cookie sheet with shortening or non-stick spray, then drop 2-tablespoon dollops of dough 3 inches apart.

  7. Gently press dough to form 2-inch circles.

  8. Bake in batches for approximately 20 minutes until edges are browned, or longer for crisper cookies.
