Instructions

  1. Preheat oven to 275 F (140 C) and grease an 8-inch square cake tin.

  2. Gently melt butter, golden syrup, brown sugar, and treacle in a large saucepan; do not boil.

  3. In a separate bowl, combine self-rising flour, oatmeal, ground ginger, nutmeg, mixed spice, and baking powder.

  4. Gradually stir the melted mixture into the dry ingredients until thoroughly combined.

  5. Beat in two large eggs gradually.

  6. Add milk, one tablespoon at a time, if needed to achieve a soft cake batter.

  7. Pour the batter into the prepared tin and bake for 1 hour 30 minutes, until firm and dark golden brown.

  8. Cool the parkin completely in the tin.

  9. Slice when cool and store in an airtight tin for at least three days for the best flavor.
