Instructions

Prepare honey syrup by combining honey and hot water in a jar, stirring to combine; refrigerate the syrup for up to 2 weeks.

Muddle fresh ginger in a shaker.

Add unpeated Scotch, lemon juice, and prepared honey syrup to the shaker.

Shake with ice for 10-12 seconds, then strain into an old fashioned glass with fresh ice.

Spritz or pour 1/8 ounce of peated Scotch over the drink.
