Instructions

  1. Prepare honey syrup by combining honey and hot water in a jar, stirring to combine; refrigerate the syrup for up to 2 weeks.

  2. Muddle fresh ginger in a shaker.

  3. Add unpeated Scotch, lemon juice, and prepared honey syrup to the shaker.

  4. Shake with ice for 10-12 seconds, then strain into an old fashioned glass with fresh ice.

  5. Spritz or pour 1/8 ounce of peated Scotch over the drink.

  6. Garnish with a lemon wheel and candied ginger slice.
